Coffee - Croissants "on the go
08:00 - 10:00 - Making L'Etivaz PDO cheese over an open fire
Jeep journey to the Molaire mountain pasture, home of Mathias and Eve Widmer.
10:00 - Educational walk in the heart of the Pastures
During a 30-minute walk, you'll discover the richness of the local alpine flora, which played a large part in obtaining the PDO for L'Etivaz.
11:00 - 13 :00 Discussions and floral aperitif on the Seron mountain pasture
Presentation and open discussion with L'Etivaz PDO producers and Jacques Henchoz*.
A tasting orchestrated by Yann Fergeau, experienced sommelier and gastronomic ambassador, will allow you to compare a selection of L'Etivaz PDO wines from different mountain pastures. Various combinations of drinks, flowers and edible herbs will complete the experience.
*Jacques Henchoz, former producer and Chairman of the Cooperative between 1994 and 2002, was a key player in the process of obtaining the PDO.
He subsequently held the positions of Head of the Federal Register of Appellations of Origin from 2005 to 2011, Deputy Head of the Town Planning Department of the City of Lausanne, and Director General of Agriculture, Viticulture and Veterinary Affairs.
13 :40 - 14 :15 Discovery of the maturing cellars
Immerse yourself in the world of maturing by visiting the cellars where our precious cheese is brought to maturity.
And if you have the time... Take a tour of the Maison de L'Etivaz Experience Centre, where tradition and innovation meet to celebrate the history of this exceptional cheese.
