From an early age, children grow up in contact with animals, learning how to care for them, respecting their rhythm, and gradually discovering the precise gestures needed to make Etivaz PDO. It's a simple but essential apprenticeship, passed on with patience and exacting standards.

Intergeneration

On the mountain pastures of L'Etivaz PDO, know-how is passed on as much as it is learnt. Some producers have trained as cheese-makers, providing precision and technique. Others, just as passionate, have learned directly in the field, from generation to generation, by observing, practising and reproducing the gestures of their elders.

 

That's how this unique know-how has endured: between tradition and living transmission, carried on by families who make the mountains more than just a place to work - they make them their heritage.
