LARGE RIDGES.
At the Gutknecht André and Marie family's mountain chalet, the mountains are a heritage and a shared passion. His uncle worked there before him for thirty-five years, passing on his taste for a job well done, the rigour of his methods and his respect for his livestock.
Today, André carries on this tradition, surrounded by his family and supported by civilian workers. Up there, life is organised to the rhythm of the herd, milking and the fire under the cauldron. In this unadorned setting, every gesture counts and every day has a real flavour.
It is here, between effort, solidarity and love of the mountains, that L'Étivaz PDO is born, the fruit of ancestral know-how and the pride of those who live the mountain life every day.
THE COULLAYTES.
On the Coullaytes mountain pasture, the Henchoz family, father and son - Roger and Fabien - proudly perpetuate a mountain history that is already in its third generation.
Surrounded by their families, they take turns throughout the summer between their three chalets, following the rhythm of the pastures and the animals.
Here, the cows graze on the rich and varied alpine grass that gives L'Étivaz PDO its unique and exceptional taste, a reflection of the terroir and know-how.
Every morning, the fire under the cauldron, the still-warm milk and the pure mountain air are a reminder that the tradition still lives on, simple and authentic, in the hands of the Henchoz family.
