Les boudins doivent \u00eatre bien serr\u00e9s.<\/p><p>2. Pocher les rouleaux au four vapeur ou dans<br \/>une casserole d\u2019eau fr\u00e9missante \u00e0 82\u00b0C<br \/>pendant environ 25 min (68\u00b0C \u00e0 coeur).<\/p><p>3.\u00a0Laissez refroidir dans de l\u2019eau glac\u00e9 pour<br \/>stopper la cuisson et les laisser reposer<br \/>24 heures au frigo.<\/p><p>4. Retirer le film alimentaire, les rouler dans la<br \/>farine puis les oeufs et pour finir dans le panko.<br \/>R\u00e9p\u00e9ter l\u2019op\u00e9ration une seconde fois.<\/p><p>5.
